Our ‘Garden to Table’ Approach
Using fresh, quality produce at the Red Lion Tavern is a top priority, which is why we are thrilled to be using produce from our very own vegetable garden on property.
Incorporating fresh herbs and colorful produce into our dishes creates a harmony between the garden and our kitchen.
A wide variety of herbs are grown, including fresh basil, purple sage, scallion and parsley. Produce includes beefsteak tomatoes, cherry tomatoes, bell peppers, banana peppers, green beans, eggplant and cucumber.
Marisa White, our garden manager and line cook at the Tavern, carefully looks after our garden and makes sure each plant is tended to.
Additionally, our garden hosts a flourishing set of first generation Italian honeybees.
An acacia tree blooms in our garden, creating an abundant nectar for our bees to carry back to one of three hives. Acacia honey is a special type of honey that is high in antioxidants, and has antibacterial and anti-inflammatory properties. Our honey is also 100% pure, with no additives used during the processing phase.
As September rolls around, which is National Honey Month, we are excited to begin infusing our dishes and cocktails with fresh, organic honey. Stay tuned for some special menu items that will be incorporating our very own Red Lion honey.
